Wow thats got a HUGE amount of fruit in it... looks like it was appreciated!

 

Yes! $100+ dollars worth of fruit!!! Have I already mentioned that? LOL!!!!

Yes there was a lot of fruit - when I added the cake mix to the fruit in that big white bowl, there was just enough cake mix to coat the fruit.

Its a really old hand-me-down recipe mum got from an old lady in Kalgoorlie, when we used to live there years ago. She's never made it so I gave it a go

 

Aaah its PROPER old fashioned recipe... yeah those things are more fruit than cake right?

Thanks, I probably will, specialy at this time of night cuz it seems that you and magda are the only ones around.   That being said, I should probably be off to bed   My oldest is having a winter party in her class in a week and a half and myself and one other mom are in charge of putting the whole thing together.  We are meeting tomorrow to discuss ideas.  Should be fun.

I iced the Christmas cake tonight. First I made marzipan from scratch, covered the cake in apricot jam and stuck on the marzipan ....

Then I made the plastic icing. This stuff is SO THICK! Its basically glucose syrup, a little bit of animal fat and a crap-load of icing sugar. Here's a photo of my mixer struggling to get through the stuff ...

And here's the finished product. I am now going to wrap it in foil and let it age in a cool, dark place (might be hard to find - its first day of summer here LOL) until Christmas. I'll trim up the edges on Chrissy day
