Ok, I am meeting free for a while.  Today I am going to share 2 easy, no-cook, veg recipes that I think you might like.  I'm always looking for meals that don't require the oven/stove this time of year.

Creamy Avocado and White Bean Wrap

2 tbs     cider vinegar
1 tbs     canola oil
2 tsp     finely chopped canned chipotle chile in adobo sauce
1/4 tsp  salt
2 cups   shredded red cabbage
1 med   carrot shredded
1/4 cup cilantro
1 15 oz can white beans (rinsed)
1 ripe avocado
1/2 cup shredded sharp cheddar cheese
2 tbs   minced red onion
4      8 to 10 inch whole wheat pita wraps


1) Whisk vinegar, oil, chile and salt in a medium bowl.  Add cabbage, carrot, and cilantro.  Toss to combine

2) Mash beans and avocado in another medium bowl with a potato masher or fork.  Stir in cheese and red onion

3) Spread 1/2 cup of bean-avocado mixture onto a wrap.  Top with 2/3 cup of slaw.  Roll up.

Makes 4 wraps.

Total Carbs 50g
Dietary Fiber 13g
Protein  13g

No cook recipe #2  Tijuana Torta

I don't know if I know how to put it on anymore...haha...I haven't worn it forever! I usually think "ya, I'll put it on today" then when it actually comes down to it I'll cop out and be lazy.

I feel some days that I should be putting it on--presentations, when I'm meeting profs, when I'm meeting patients in school...then I'll be lazy and not...haha...

Ann, I used to be pretty sporadic about taking vitamins mostly because getting out of the house in the morning is a bit like T1.  Anyhow, I just brought them all to the office and keep in the drawer of my desk.   Chances of me remembering to take them sometime during the day is pretty good.

I have been taking a B Complex with Vitamin C and D in the mornings when I take my arthritis medicine. I used to take a Flintstone vitamin when I'd think of it, but now the kids take gummy vitamins and I don't like them.

Oooooo...I forgot to tell everyone: I bought myself new sunglasses on Sat. Oakley Flak Jacket! WOooooo!

I had borrowed stole a pair of my dad's cheapo glasses because I lost my set of cheapo glasses in Vancouver somehow when I did the half marathon. My dad's pinched like crazy when I was riding and would steam up during running...so I have now amended the situation. Haha.
