Subject: Whole Wheat Pancake Mix

I decided to give it a try.  The box recommended that I use eggs, oil and milk with the pancake mix.  I only had soy milk (wasn't sure if that would work or not) so I decided to just use water.  I added some blueberries and the pancakes turned out fine- they were so delicious!  I highly recommened whole wheat pancake mix!  And- you don't need all that other stuff- just water works fine.

I noticed that I ate less of them and was more full.  Is that due to the increase fiber?

Try this....Oatmeal Pancakes.

Mix a cup of oatmeal, 1 banana, 5 egg whites, 2 teaspoons of flaxseed oil & a teaspoon of cinnamon in a blender (hand blender works best). Pour batter in a pan and cook. You may need more or less eggs depending on how big the egg is so your batter is not real thick. Should be the same consistency as pancake batter. You can also use real egg whites that are in the carton. The ingredients can be modified depending on how much protein or carbs you want.

For a topping you can use real fruit jelly or peanut butter. I use Polaner All-Fruit Jelly & Flax seed peanut butter.

I usually double or triple the ingredients and freeze them so all you have to do is warm them up in the microwave in the morning.

I think you could 86 (e.g. leave out) the banana...

I've thought of adding nuts or blue berries. The banana does give some liquidity to the mix so you might have to add some water.

It's a pancake/waffle mix.  So you can use it for waffles as well.
