I make kumquat ginger marmalade, lemon pickle, jalapeno mint jelly for holiday time.   But, I was just open kettle canning.....   oops

The first time i made jelly, it was hot enough when i filled the jars that some of the jars sealed before i had a chance to get them into the water bath. They still went in, though.

i love canning. It's all science, but it seems like magic.

i made strawberry jam, yesterday. Yum.
