Bike Build Fork/Wheels Questions

Any suggestions on a good middle of the road carbon fork and wheels.  I have been combing the web for a couple days now and just when I think I have it under control, I come upon a horrid review of each fork/wheel.  I can find some good deals on a lot of the Easton forks but I hear they are a little to flexible.  I have almost pulled the trigger a couple times on some Neuvation wheels.  I just worry I may be a little heavy for a low spoke tire.  I am 5'9" and am weighing in between 190 and 185.  Would like to ideally be down to 175 by the end of summer.  I am going to begin doing a bike build soon and any advice would be great.  I know these have been discussed before, but I appreciate your thoughts and opinions.
