Looking for something easy, healthy, and delicious to make for myself tomorrow night for dinner. What is your favorite dinner after a long, hard work week?!

I just posted a really good recipe for a creamy avocado pasta in the nutrition board's cookbook thread a couple of days ago.   It's really fast and simple.  It as a side with a nice steak or some chicken and a green veggie.... sounds like a great meal to me.

I'm making lamb steaks - rubbed with ground cumin and ground coriander then fried until rare.

Servd with a Quinoa salad - Quinoa tossed with the zest and juice of an ornage, 1tsp of honey, 1tsp olive oil and an avocado.

Fresh mint leaves to serve....

i like soup. Zuppa de pesce is an all time favorite of mine, but I tend to throw in shrimp and scallops along with the fish, just for variety. It's a tomato based soup that cooks up easily in 25 minutes.

Turkish Lamb Flat Breads ala Jamie Olivers 15 minute meals website just pile on the extra salad. If you cant find lean lamb mince use normal extra lean beef.

On Fridays I have to do easy or we'll end up eating out. Usually it's something thrown on the Foreman grill -- steak or sausage -- or something fun, like tacos.

I had a super duper salad and some left over mashed sweet potatoes (purely the potatoes-not the thanksgiving kind). Kids had rice, chicken, chili beans and salsa bowls.

Friday night is homemade pizza night at our house. One of our favorites is pesto, mozzarella, crispy bacon, mushrooms and caramilized onions. Pop in a blazing hot oven on a pizza stone for 7-8 minutes. Enjoy!

Fish tacos! I can throw that meal together in about 15 min. I use a tortilla crusted tilapia that our grocery carries fresh in the fish case. Add a little shredded cabbage, fresh cilantro, diced avocado and some chipotle ranch dressing. If I have plantains that are ready, I will cook them up before the fish and use that as a tasty side/appetizer.  Yum!
