Stretching is definatley the way to go. From years of swim team in HS & U, we would always stretch before hand. When ever we didn't we usually got the foot cramps. Your foot is not used to being in a point position all the time.
Mine have gone away since I started stretching my calves and doing a pointed-toe stretch before getting in the pool. I will even do a little stretching during the interval breaks just to make sure they stay away.

Basically it is the opposite movement as the calf stretch. As I stand on one foot, I move the other foot to the side and point my toes like a dancer would.
