Good bike routes in Vegas area?

I will be in Vegas for a short vacation from October 8-11.  I know the Viva ride is on the 10th, but my husband and I are looking for other ride options  to do on our own.   We are renting bikes, and managing a morning ride (before the shops open) is a PAIN.

We plan to ride through Summerlin (renting from McGhies) and up to do the Red Rock Canyon loop.   Can you recommend another scenic, perhaps slightly less challenging, loop we can do in addition to that?  Maybe another 30 miles, max.  If you'd like to join us, even better!  We're open either the 9th or 10th.
