Subject: summer tomatoes
Just felt like I had to pay homage to my favorite veggie...the summer, home-grown tomato.  I love it at breakfast, snacks, lunch, and dinner.  The best:  sliced tomatoes with a little olive oil and salt with greek yogurt.  Sorry...gotta go eat.  Yum!

What do you do with the olive oil, just drizzle it on top? Sounds a little odd to me pairing those ingredients - but hey, sometimes odd is delicious! I too love the homegrown tomato. My mom's are looking lush and probably weeks from harvest. I am thinking of making a salsa. Peace and Enjoy!

It's like caprese salad - just tomato slices, fresh mozzarella slices, basil, drizzled with olive oil and some salt and cracked pepper. Delish. In fact, that reminds me, I haven't made that yet this summer!

Pretty classic italian mix isn't it?  We have it all the time + a bit of Mozzerella, mmmm. 

Actually I used to hate tomato's until we started growing our own Heirloom tomato's a few years back.  It is amazing how a real tomato tastes vs. what you normally buy in the grocery store.

I love a good caprese salad. Friday for dinner I had a great one with heirloom tomatoes, buffalo mozzarella, haricots verts, basil oil, fresh herbs, and some balsamic. Delicious! Yesterday for lunch it was gazpacho made with tomatoes (and other veggies) that a friend's mom grew. I have a bunch of CSA tomatoes and basil at home, so tonight I think I'm doing some sort of pasta with tomatoes and a rough-cut pesto, maybe some mozzarella as well.

I love summer!

 I am almost ashamed to admit this...but it's true. I had a great uncle of mine die recently. I went to the funeral, and burial. Afterwords there was a huge meal fixed for the family at his church. I loaded, up my plate and was sitting talking to cousins that I had not see in years. I kinda looked over the spread of food, all those farm fresh veggies, black eyed peas, little white peas, purple hulls, zippers, Lima beans, butter beans,,, cucumbers squash, corn and of course tomatoes. As I was sitting their staring at them, the thought drifted across my mind..." My family members need to die more in the summer, than in the winter...the foods so much better!!! Surprised Yell. HOLY MOLY... I can't believe that thought just went through my head!!!!"

I sprinkle the EVOO on top.  I had a friend from Saudi Arabia who used to put the greek yogurt (not sweet) on her bagel, then sprinkle it with seaseme (sp?) seeds and olive oil.  It is soooo good!  You could probably add a tomatoe too!

I have avoided opening this thread in anger at my singular potted tomato plant which had only given me 1 tomato thus far but I just went home at lunch and was watering the plant when I spotted 6 baby tomatoes.  So I can look forward to some sliced tomatoes with kosher salt, black pepper and basil from my patio garden as well.  Mmmmmm, can't wait!

My tomato plants are totally exploding (along with the basil) I've been tossing the chopped tomatoes with pasta, basil, garlic and olive oil. Yum!!

I also love mixing them with kalamata olives and fresh oregano and packet cooking them with tilapia on the grill (yum yum yum).

I wish I had some right now.
