You enter in the ingredients and quantity, and it spits out the calories and all the other nutritional information?

I found one once, waiting for my banana bread to come out of the oven (which confirmed to me i needed to eat the whole thing Cool , but haven't found it or any other similarly good site since.

I found one, where you enter in your 'pantry', and add your 'ingredients' to a recipe, but definitely wasn't anywhere near as user friendly.

I definitely second that. I have dabbled on several of these sites and nutritiondata offers more extensive information regarding all foods - even specific brands. The other tools are useful too; like the 'daily needs calculator' , 'fulness factor', and the overall ease of use.
