I personally go for the spaghetti with meat tomato sauce and a baked potato.  The morning of i usually play it safe with some oatmeal and toast. (usually on normal days go with fiber 1 cereal.)

I usually carb it up with pasta two nights before the race (they say it should be around 36 hours prior).  So with that in mind I usually eat something relatively light such as salmon and spinach with rice and such the actual night before.  For race morning I eat toast with peanut (or almond) butter and a sliced banana and/or honey

I haven't done my first tri yet, but for running races I like to have lasagna or some other pasta goodness the night before the night before.  The night before I have something like turkey burger with salad.

I tend to get all vomity if I exercise with too much food in my stomach, so I keep it as minimal as possible the morning of.  Typically I have a cup of coffee, a banana slathered in peanut butter, and some water.  But I haven't yet competed in any races that last more than 2h -- I would probably turn my banana + PB into a peanut butter + banana sandwich in hopes of getting a bit more fuel.

Edited because I had a chronology brainfart.

I typically carb it up the night before with some pasta.  Morning of is usually kinda light - bagel with PB and a G2.  If I try to eat more than that I get vommy.

No routine for the dinner the night before, but for breakfast I always have a muffin or two, and if still hungry a banana.  Washed down with Gatorade.

Before half iron distance races I've had good luck with a Califonia roll (sushi) with some fried rice for dinner. For breakfast I eat a couple toasted peanut butter and honey sandwiches with the crust cut off about 3 hours before the race. Sometimes I will wash that down with an Ensure, water and/or some gatorade. I also take a powerbar gel about 15-20 minutes before the race washed down with water.

Lately, we've been having pretty good luck with a giant burrito the night before a race.  Chipotle, Qudoba, Panchero's, etc.  I know it sounds a little risky, but we found a local burrito shack the night before our last race and gave it a try.  Got the veggie deluxe burrito with chips and salsa.  Super tasty!  And both of us had a great race.

Breakfast is usually some form of bagel/peanut butter/banana.

I know Fred (PennState) likes Fried Oysters

I haven't found a favorite pre-race dinner food... yet.

Morning of I keep it simple with a clif bar (or powerbar) , 1 piece of fruit, and 1 cup of black coffee.

Being a newb, I played it safe for my 2 races last year.  For dinner the night before, I had a sauteed plain skinless chicken breast with some rice and a small salad.  For my raceday breakfast, I had a glass of water and a packet of instant organic unflavored oatmeal with some sliced bananas, a little natural PB, and a sprinkle of cinnamon about 3 hours before start time.   Then I had 1 gel and some water 15-20 minutes before my wave went off.

Before a race a buddy and I loaded up at the Olive Garden and did the Tour of Italy with the Salad, bread sticks, and the sampler appetizer.  We drank water but I finished with a single Budweiser and it was all I could do to not puke.  I felt good at the triathlon and probably loaded up with enough carbs to last me for the rest of the year.

My 1st triathlon I went to Dominoes and got the Pasta Bowl.  I got some kind of beef and ravioli type deal and it was good!!!
