We used to go to a breakfast place which had 2 specials: "the Farmer's wife" and "the Farmer's daughter". The daughter only had 1 egg; the wife had 2.

We'd always snicker and ask to eat the Farmer's wife. Good, juvenile times....

JIM'S, 4th and South, Wiz, wit.  Nothing like cheese from a paint can.

For eggs, central PA has something called "Honky Style" potatoes and eggs.  "Dutch Omelet" is another term for it,  it's more or less home fries cooked, then mixed in with omelet juice, and cooked up with peppers and/or onions.  Throw some cheese on top, and it's heaven on a plate.
