those do look good!!! Remind me of Cannelonni...
So Im guessing its cook up some chicken, mix it with some stuff, wrap in tortillas. put in dish, add sauce and cheese - then bake.... kind of like cannelloni actually! exactly! it is so darn easy, it seems like a crime - LOL Wow if I can find enchillada sauce down here...I should try it! |

Not only are you a challenge queen, Beth, but also the Enchilada Queen. Hope your mom is feeling better. Glad you are able to chat, Cat, even with the career in high gear (poetic, huh?) Thanks for posting all the OWS tips, Jen. I'm getting ready for a 40 mile ride this morning. I need some stress release. The miscommunication continues for me at work. I received a June schedule via e-mail with my name on shifts for the first week of June. I'm not sure how that is possible since I gave notice in APRIL that my last month guarding would be MAY. My kiddos have half days at school the first week of June and I'm volunteering at their end of year parties and will attend their awards ceremonies. Then we are leaving for NH and Mooseman on the 6th. I don't need to worry about cramming in three guard shifts that week in addition to my workouts. Must get out the door before the morning is gone.
