I start with a not-fatty, high-quality ground beef (sirloin, etc.), stir-fry with fresh-chopped onions, garlic, tomatoes. You can add pre-made taco or chili seasoning; I just toss in salt, pepper, paprika, chili powder, and soy sauce to taste. Then I add a scoop of brown rice. (Quinoa would work great with this, too). Cut the tops off peppers, cut insides out, stuff with stir-fry mix, pop in the toaster oven for 20min or so. YUM. |
