 Yeah, and I guess Tony. Morning Jim! Did you buy your Chirstmas presents yet? What flavor beer you thinking for the first batch? I'm ashamed to say... But an apple wit... I needed to sell the wife on the idea and she LOVES an Apple Wit from Ephemere, so I found a ingredient kit from Midwest that seems to be similar. Basically beer with some apple extract in it to give some undertones... I would prefer to make something a bit more standard - but getting her excited about the new "hobby" is key. But no, I haven't bought it yet. I still can't decide if I want to buy fancy Grolsch type bottles or drink my through a bunch of Sam's club beer and cap standard bottles. I guess I could buy the ingredients and start it up, and worry about the bottles a little down the road. Don't stress, I am required to make at least 2 a year specifically for the wifey. I think of it as an investment in my hobby. I've made that apple before. Add 1/2 to 1 gal of apple cider to the fermenter after the first day or two to add a little more flavor. It turned out pretty good. My wife is into the harder ciders as well which made for some great brewery tours in Europe when we were passing through. Never thought of brewing it myself though. What kind of cycle time from start to drink is it? Good question. I was just going to make an apple flavored beer, not a hard cyder. But the wife would love me to make a hard cyder. I have mad a CYSER, which is an apple wine, but again, not the same thing. |  |

I'm not too sure on the cyder either, but I have made quite a few fruit flavored beers; rasberry wheat, apple ale, pumpkin ale, & cherry wheat so far. There is at least a month between brew date and drinking date but some beers need more aging time. The process I have seen the most success with is about 6 weeks start to finish (1 week primary, 2 weeks secondary, bottle/keg, 2 weeks to carbonate, 1 week in fridge before drinking). Using a keg rather than bottles can cut down onthe carbonation time since you can speed up the process by pressurizing the keg. |

Granted, I picture a mountain girl in jeans, boots, and red flannel like a lumberjack... But that's just me. |
