Anyone got any good meal ideas that can be knocked up on a school night but seem kind of impressive....

S is coming over Wed night and I wont have a huge amount of time to cook but Id like make something thats at least a little impressive (even if actually really basic!)

His Mum is an amazing cook so that makes it harder!!!!

I made a pasta dish the other night that was easy, fast, inexpensive and yummy....

cook 8 oz penne pasta (I used whole wheat)

Remove casing from sausage and cook, add 1 onion sliced vertically and about 5 diced tomatoes, few cloves garlic.

When pasta is drained add to the sausage, toss in 6T good parmesan cheese. 

Dinner in about 35-40 minutes  with only 2 pans to clean

Well, is the verdict still out on this regarding "WTH did I get myself into" or "What wonderful Wisconsin dairy air" or "Gawrsh, no wonder they call this God's country"?

I did experience a bit of that dairy air while I was riding yesterday, fortunately that was on part of my 8 mile detour, not the actual course.  I must say that my detour was even prettier than the rest of the ride, plus it had perfect asphalt.  I can't say that for the paralleling leg of the course.  That road has lots of seams.

The alarm goes off.  The boy stands up, turns off the alarm, announces that it is noon, and then climbs back into bed. 

In the meantime the kitchen is looking much better...

Yeah, see.... Onions and garlic may not be the best choices. It is a "hot date" after all!
