Squash enchiladas:

tortillas
can of enchailada sauce
grated zuchinni and or yellow squash, roughly 2 cups
can of black beans (I'm too lazy to soak and boil my own)
grated mexican cheese mix, roughly 2 cups
cream cheese, about a cup

Mix together the squash, beans, grated cheese and cream cheese.
Cover bottom of baking dish with a thin layer of sauce
Place on tortillas, add a splash of sauce.  roll the tortilla and place in the baking pan.
Once pan is full, cover with the remaining sauce, sprinkle more grated cheese on top. 
bake until bubbly and warm about 20 - 30 minutes, 350 degrees.

Quantities are estimated as I just make it up as I go along depending upon how I feel that day.

Thanks but I wasn't joining in.  I was trying to make a not so subtle point.  Our thread has 46 pages.  The others have 6.  I'd like to come in here and meet you guys and talk about our training and perhaps the Tour.  I'm sure I'm not alone.  Let's keep the post padding to a minimum.  It's sort of like drafting in a race.  Sure your times were low (posts are high) but was it worth it?  Nope.

So, helluva ride on Sunday!  I'm doing a short ride tonight because my wife's friend is doing her second tri this weekend and is a little nervous.  I'll get in a long ride tomorrow though!

Hey, Rob.  In case you missed it waaaay back buried in the umpteen pages, I was asking folks if they could post pics of any of their stages where possible.  If not a live shot, something pulled off the web will work.  Maybe give a little description of the conditions and route?  It'd be nice to see and hear about where everyone else is riding.

Don't remember if I mentioned, but I went to my LBS and swapped out for the Terry Tri Butterfly saddle last night.  Gonna take er out for a spin tomorrow morning.  Hoping for a much less painful rear this time around!

I can hold my own with the cabs, it's the homeless people, skateboards and bee swarms I have real issues with!

Razor Scooters too right!?  Bee swarms, for real?  I'll try and take a nice morning ocean view pic tomorrow morning.  Nothing to write home about for my elevations but the views are purty!

Mina, how are they with saddle swapping?  Do you have to buy a new one each time or do they let you really swap them out?  I'm not a huge fan of mine...
