I love inventing stuff.  I call it "whatever is left in the fridge about to go bad" medley.  Today I did a cut up chicky breast, 1 zucchini, some broccoli florets, sweet onion, 1/2 a red bell pepper.  Sautee'd that up in some olive oil, and nothing else, and I had a delish lunch!

Sounds good!

I prepared two cups of quinoa (made about 4 cups after cooking),  mixed it with a bag of frozen boccolli, a 16ox can of crushed tomatos, and added some salt/pepper/seasoning.

One layer of the quinoa/brocolli/tomato mixture, then a layer of uncooked tilapia fillets, then the rest of the quinoa mixture.  baked covered for 45 at 400.  topped with just a sprinkling of parmesan cheese for the last 10 min for a bit of color/crunch.

When I ate the quinoa I would cook it in water and veggie broth .. then throw in chopped (very small chopped) red bell pepper and onion and zucchini.  The broth and sweetness of the pepper made it taste like a flavorful couscous.  I miss the quinoa .. I should try and add it back to my diet and see if it still bloats me up.

Oh yeah, I added chicken boullion to cook mine.  Just a little extra sumthn sumthn

Sometimes I make something so amazing, then kick myself for not writing it down or remembering how to do it...  I just wing it adding whatever I have, and get lucky.  I made some chicken vegitable soup that knocked my socks off.  Never was able to reproduce it again exactly.

Hmmmm...sounds pretty good. Think I have nearly those ingredients for tonight. Leave it to a quinoa recipe to bring me out of lurkerdom

I once told my wife, "Don't watch hon.". She was amazed I had a lock picked in 2 minutes. One of those skills a man should have.
