6'7" with a 36" inseam (pants size).  I bought a 61cm P2C and was fitted with the saddle in the forward position.

That's kinda personal considering we just met and you haven't even bought me a drink yet. Sorry, couldn't resist.. and sorry i don't ride a cervelo but man were they ever fast when they were passing me at my first sprint. Good luck with your shopping.

5'10 with a 30.5 inseam and I ride a 54 P3 with 700c wheels.

What is more important in size, torso or leg length?  I am 5'11" but have a 35.5" inseam.  Never thought I was all legs.  Would such a short torso push be towards a 56 or 58?

Acknowledging that fit is an individual thing and involves more than just the measures you describe I am 5' 10.5" with a 32" inseam and just ordered my 56 cm P2C.  Test rode one in Lake Placid this past July and it felt fantastic.  Was told by two people who know bike fitting that it looked like a pretty good fit with the minimal changes they made to set me up for a demo ride.  Good starting point to start dialing in from.
