From some of the under water footage it looks like a lot of the swimmer start their catch with open fingers?  Can't tell if their pull is done with slightly open fingers or if they close them for each stroke?  Anyone else notice this?  Can anyone confirm/explain?

It increases the surface area of your paddles.

Hmm - and I would have thought letting the water slip through your fingers would lessen your pull.

Nope.  With the fingers together you lose surface area as Jim pointed out.  Also, It's harder to keep your hand "square" with water if the fingers aren't open a little.

The slight turbulance between the fingers allows you to hold the water during the catch, the open thumb allow you to keep a relaxed arm.
