Garmin 305 Bike and Run
First time I'm going to use the garmin 305 for the bike and run portion of a sprint tri.
My assumption is I can turn it on before the race begins, leave it in my bike mount and then have it still be on ready to go when I run into T1.

yes that is what I would do for a sprint, as your distance gets longer your plan might change

Just and FYI that it has the 'MULTISPORT' option. I am sure you already know this, but just in case.... I LOVE my Garmin. Wish I could wear it on the swim though.
