I think for what I do, it is important to note that I wouldn't ride anything else unless I found something faster. I think it is also important to note that I ride my commuter road bike most of the miles in trainer. It has 42mm tires, and baskets, and I have a pair of Shimano MTB shoes with 3 straps. They are Shimano's cheapest shoe but probably one of my favorite shoes off all time.
When it comes down to it, it really is all about goals. Personally, if I was just in triathlon for fun and enjoyment I would probably use my commuter road bike with 42mm. It is so comfy and a joy to ride compared to my TT bike, but it is super slow too.
Is cutting out a tongue more comfortable than not. Probably not, but then again, I don't really really think having the tongue removed is uncomfortable either.
