Subject: Gluten Free/Dairy Free/Egg Free/Corn Free Chocolate Chip Peanut Butter Cookies

From my friend who has a daughter with celiac:

1/2 C Smart Balance Lite Buttery Spread

1/2 C Brown Sugar

1/2 C sugar

1 T Vegenaise Grape Seed Mayo

1/2 t. vanilla

3/4 C brown rice flour

3/4 C sweet white rice flour

1/2 t. baking soda

1/2 t. salt

1/2 C  Ghiradelli semi sweet choc. chips

1/2 C Adams craunchy Peanut butter

Cream sugars and the buttery spread, then add mayo and vanilla. Separately, mix the dry ingredients then add to wet ingredients. Then mix in the peanut butter and chips.

Bake at 375o for 12-15 minutes. About 70 cal each/45 cals from fat.

These are very good tasting cookies.

Does she have to be diary free for another reason? There are LOTS of good baking mixes out there with some dairy products in them. (don't chocolate chips have dairy in them?)

Mainly Pamela's and Gluten Free Pantry...

No dairy in the semi-sweet chips. I am not sure if she has to be dairy free too, though. This is a good recipe for those who need to be gluten free and casein free (casein is found in dairy).
