Training, fresh legs, strong mental attitude, etc. There's nothing magic about 20 mph. Your rode 30m a few days before at 18.4 mph so an add'l +1.7 mph is easily possible on a breakout day.

In any case, CONGRATS! No go for 21 mph. (There's nothing magic about 21 either except in Vegas.)

If the ride starts and finishes at the same point, there's only one way that a constant direction wind can speed you up on a course compared to a flat wind, and it's rare. You need a tailwind that's blowing up a big enough majority of climbing so that the total climbing of the course is effectively reduced. And that wind can't significantly effect you negatively on the rest of the course.

Since our climbs are long (5-20 miles) it does happen here sometimes. It's more common in Colorado on the west facing climbs but I don't usually ride those.

I ride a loop that's heavily wooded on the southern, outbound leg (the way I normally ride it, clockwise)  and goes through bare fields on the return. When the wind is heavy out of the south there's a significant benefit. When it's out the north, I ride counterclockwise.

No hills, though.

Anyway you look at it that was a great ride and must feel pretty good. I recently completed a ride for the first time above the 20 MPH mark and it was a real breakthough feeling. Soon you will see more and more rides above that mark. Good job.
