I am produce limited, but have a reasonably stocked pantry. by produce limited what do you mean? one of my go-to meals (and I use either chicken or shrimp) is saute some onion, some bell pepper, some garlic, throw in the chicken (you can marinate it if you want - i use like a lemon pepper type marinade; or just some seasoning - Mrs. Dash/Paprika etc) - then what its cooked through - throw in a bit of spinach and let it wilt a bit (you could also use Kale or any other green leafy veg) I also have a coconut chicken recipe that is pretty good (if I do say so myself) - pretty simple - dip the chicken in raw egg, then coat in a mix that is half almond flour/half unsweetened coconut/ you can add spices if you want - I typically put in a bit of Cayenne or Paprika for a bite - brown each side lightly in a pan, and then throw in the over (about 350F) until cooked (about 10 minutes or so) Edited by austhokie 2013-07-25 1:42 PM |

Warm german potato salad (boil potaoes, cut into coarse chunks, add a couple of sticks (yes sticks) of butter, add some hard boiled egg, scallion (do you have scallion?--onion would work), cider vinegar, salt and pepper--serve it slightly warm or at least room temp. Grill your chicken with some blackening seasoning and put it on that romaine with a ceasar dressing. Get yourself some good azz beer. Invite me over:) |

Place the cleaned and filleted chicken breasts in a gallon sized freezer bag with lime juice, olive oil, salt, pepper and finely chopped jalapeno. Red and poblano peppers also go in in ours but I'm guessing you don't have those. Really any veggies will do. Marinate for three hours. Grill. If you happen to have salsa on hand, it's delicious served on top. Especially the black bean variety. I eat mine with hummus because I just put hummus on pretty much everything. |

That looks like a great marinade. Saved for next week. I may take license with this and add some tequila. To the chicken as well. I always have red and green pepper slices in the freezer. For those times you don't need a whole one, I freeze them on a plate, then, once frozen, stick them in a bag for later. They work well. I also freeze the other 1/2 of the lemon's juice when I don't need that. |

I ended up throwing 4 big chicken breasts in with the flour and letting them sit overnight. The next day I coated the breasts with the butter/hot sauce solution and baked the chicken breasts. Wow, they were amazing. It's like big buffalo hot breasts!!! Perfect for the male buffalo. |
