Does anyone know if it's waterproof? I am assuming it is, but the manual doesn't say...

I wear mine in the OWS portion of races only, so not frequent, and haven't noticed a problem.

Generally no. It will survive if you sweat a lot. I have heard of people wearing it under their trisuit and wetsuit. But I had mine die in the pool.

I've only wore mine swimming about 5 times when I was wearing my wetsuit and it hasn't dies yet. I never wore my 305 swimming and it died about a week ago and I had to trade it in for a refurb.

I've worn my 305 HR strap through quite a few swims, with no problems so far. I've used a couple of other HR monitor straps for the swim portion of my triathlons without issues too. The only problem I've had was with the wrist mounted part of a cheaper Nike monitor and that was after wearing it through workouts and swims for a few years. Just be careful of the rubber O-ring seal when you're changing batteries in the straps.
