In a large stock pot, saute chicken in olive oil over med. heat until chicken is cooked. Add onions to chicken, reduce heat, cook until onions are tender

). Add remaining ingredients except for chopped cilantro and lime juice. Simmer for 15-20 min. Add chopped cilantro and lime juice, taste and adjust seasonings, serve immediately!
