Subject: chicken salsa chili
for those who are in the cities and have been to café latté - this is their famous chicken salsa chili, only a big lighter on the fat (cut the olive oil by 60%). very yummy. haven't figured out the specific portion yet, but i would guess about a cup. am making this tonight, so i will get the measurement/oz weight for those who are counting calories. (spices, jalapeno, and lime juice are not included since they had <2 calories per batch).

(slightly lighter) Chicken Salsa Chili Serves 8 people.
1/8 recipe = 305.25; f 6.8g; sf .3g; ch 33mg; carb 42.15; df 10.1g; s 8.75g; p 25.6g; cal 36mg


1 tbsp. olive oil (120; f 14g)
1 lb. boneless, skinless chicken breast, cut into 1 inch pieces (500; f 5.5g; sf 1.4g; ch 264 mg; carb 0g; p 104.5g; cal 50mg)
1 1/2 c chopped yellow onion (96; f .4g; carb 20.7g; p 2.4g)
1/2 tsp. crushed red chili pepper flakes
1 tbsp. minced fresh garlic (13; carb 2.8g; p .5g)
2 tsp. minced fresh hot Jalapeno peppers
1 1/2 c. chicken stock (pacific or-fr broth = 15; carb 1.5g; p 1.5g)
3 tbsp. chili powder (salt-free)
1 can (28 oz.) whole tomatoes, undrained and broken up (mg diced = 175; carb 28g; df 7g; s 28g; p 7g)
1 can (29 oz.) tomato Puree (mg = 280; carb 70g; df 14g; s 42g; p 14g)
2 cans (15 oz.) dark red kidney beans, drained (541; f 2.1g; carb 97.1g; df 27.3g; p 36.2g; cal 119.3mg)
1 can (15 oz.) garbanzo beans, drained (699; f 11g; sf .9g; carb 116.7g; df 32.4g; p 38.3g; cal 208.7mg)
1/3 c. chopped fresh cilantro (3; f .1g; carb .5g; df .4g; p .3g; cal 9.2mg)
2 tbsp. fresh squeezed lime juice

In a large stock pot, saute chicken in olive oil over med. heat until chicken is cooked. Add onions to chicken, reduce heat, cook until onions are tender (about 5 min.). Add remaining ingredients except for chopped cilantro and lime juice. Simmer for 15-20 min. Add chopped cilantro and lime juice, taste and adjust seasonings, serve immediately!

Yum, that sounds good! I haven't had the chili at Cafe Latte, but it sounds great anyway! I'm going to print this and try it for sure! Did you figure out what the serving size is for sure?

(I must have missed this post back in March...)
