I have chicken.  Please help.  I'm sick of thinking about this question every night.  I need inspiration!  Help me, CoJ!!!!!!!!!!

Hopefully you've already eaten by now.   But, what we did for a while is plan our meals ahead of time by taken a cook book and randomly opening to a page and that is what would end up on the menu.  Got us to try new things in the cook book and took the thinking out of it.

Hopefully you already had dinner - but for next time:

Stop by Trader Joe's and get some Masala Summer Sauce and a package of broccoli flowerettes. Cut up your chicken and dump it in the pan with some of the broccoli and the Summer Sauce with 1 Cup of water. Cook up some rice.  Dinner.

If you want to get all fancy and have 2 big peaches, heat the oven to 425. Set an 8x8 pan with a 1/2 stick of butter in it to melt while the oven preheats. Stir together 3/4 C sugar, 3/4 C flour, 2t baking powder, and 3/4 cup milk (can be skim). Pull the 8x8 pan out - the butter should be melted - and pour the batter into the pan with the butter. No need to stir. Slice your peeled peaches onto the batter. This should be fairly even, but don't get all OCD about it. Sprinkle with up to 1/2 C sugar. (or about 2T sugar in the raw - that chunky kind). Bake 40 minutes (until brown on top). I forgot to sprinkle the sugar last time and it was fine. Now you have dessert too.

I'll tell you how the leftovers are tomorrow.

The leftovers heat up nicely and taste good. Two thumbs up from someone who doesn't like leftovers.

The chicken parmesan recipe sounds good! I'll have to try that.

ETA - I ate the last of the peach cobbler this morning at breakfast. MMMmmmmm!!!!

Mmm pesto chicken. Just get some pesto or make some pesto, coat the chicken in pesto, bake it then throw on some tomatoes and cover it all with some mozzerella. Yum.

x2 on pesto or try making a romesco sauce.  Both freeze really well.  I also posted this recipe in another forum. You can add chicken to it and eat it as is or throw it into a tortilla. 


My fave summer recipe that I threw together a few weeks ago: Warm Corn Salad

3 ears fresh corn (kernels cut off cob)
1 sm onion- diced
1/2 carton cherry tomatoes (tom. are halved)
1 sm red bell pepper- diced
2/3 can black beans- drained and rinsed
Olive oil
Chili Powder to taste
S&P to taste
Optional: 1 can of Rotel

Put >1 tbsp of oil in pan.  Cook onions until translucent on med heat. Add corn.  Add chili pepper to taste.  Cover corn and onions for 3-5 min.  Add red pepper and black beans.  Let cook for 2-3 min.  Stir in cherry tomatoes about 2 min before serving.  Add more chili powder if you like heat and S&P to taste.  Serve with lean protein (chicken, fish, etc), on rice, or eat alone.  Very yummy!

I have no idea about caloric content, but it's healthy and with minimal use of EVOO, you should be fine.  I served it with a pork loin last night with a spicy pork rub on it.  Nom nom nom!
