kimj81 - 2006-02-15 3:43 PM How the hell do they figure that out?

And more importantly what happens if you don't do it on a "best day"?

It grows back.

Actually it depends on the animal, and method of castration.

Cattle are commonly castrated using very small elastics stretched over the, um, you-knows, and then left on. In a few days the, um, you-knows, shrival, turn black and fall off on their own with very little risk of infection, or bleeding.

If this is not done on the right day, the blood flow is not completely cut off by the elastic, and while they may shrival, and blacken, they won't fall off. This requires a 2nd attempt at castration. Not pretty.

The original attempt doesn't exactly sound pretty either... but then maybe that's just me.

they are indeeed goood eating.. Rope the bull, take him down, aproach carefully, tie the back legs, pull the jewls with your left hand and with your right hand make a fast insicion at the bottom of the sack. the Jewls will come out rather easy.... The testicles are now supported only by the spermatic courd, Take hold of the testicle and pull with a strong steady motion. Streaching the cord this way, it will streach and tears the blood vessles which minimize bleeding. Cut the remaining tissue out, add some iodine to the area.... lose the ropes and let the former bull go...

proceed to the fire pit, stick a piece of wood or steel to them, coock slowly over the fire... Put between two pieces of bread, add some salt, pepper, onion and bbq sauce.. and enjoy...

Or you prefer, keep them in ice, take them home cut them in little tiny pieces, submerge in lemon and leave overnight.. Next day add finely chopped onion, tomato, celery, and some mit... and you got yourself an amazing CEVICHE...

My instincts are more pratical - note to self: politely decline any offer of ceviche from Luis.

There's an event near my town every year, just a few miles from my house.  The hold this event and they serve a certain delicacy there and the event is a celebration of this tasty treat.  I'm building up to this because because I think it is the greatest named event in history.

 The Turkey Testical Festival.

Go ahead, say it out loud and try not to smile.  Cracks me up.
