i've just felt kinda bad.  especially after the transition run last sunday when "someone" looked at me and said "we're running 8:10 right now... wow i was going faster than this a few minutes ago and thought i was running 9:30."

yeah.... kinda feeling bad.

BUT, this is gonna be fun to watch.  ;-)

There is a chill in the air here in Tucson and it is time to break out my favorite hot breakfast.  It's super yummy.  Sometimes I use regular applesauce, sometimes cinnamon applesauce

Yield: 5 servings (serving size: 2/3 cup)

Ingredients

  • 2  cups  uncooked quick-cooking oats
  • 1/2  cup  packed brown sugar
  • 1/3  cup  raisins
  • 1  tablespoon  chopped walnuts
  • 1  teaspoon  baking powder
  • 1 1/2  cups  fat-free milk
  • 1/2  cup  applesauce
  • 2  tablespoons  butter, melted
  • 1  large egg, beaten
  • Cooking spray

Preparation

Preheat oven to 375°.

Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.

To everyone in the Mentor group,

I just wanted to thank all of you for your inspires, kind words, and encouragement during the past 20 weeks of training for my first HIM. I can't believe after 2 wrecks in Dec and Jan and a bad knee in Jan that I'm finally 2 days away from the start line 100% healthy.

Regardless of the race outcome, I am in a better spot physically and mentally than I was 20 weeks ago and I have all of you to thank. Regardless of how large or small, all of you had made an impact at some point along this journey and I just wanted to say "Thanks"
