It wasn't a matter of what the patron *thought* she should give - it was company policy to auto-charge the 18%.

In my mind it would be the same as saying "my meal was only worth $5, not the $12 you're charging me. So here's $5. We good?"

It reads with no other purpose than to demean a class of people based on thier style of speaking. An entire race of people based on invented speech typed in a demenaing manner.

I'd say that's racist...To call it realist (or as you put it "truth and humor") makes the intent even more offensive.

Add babysitter, groomer, skycaps, food delivery, doormen and housekeepers.

I've lived in a lot of different places. The vast majority of them work pretty well and there's nothing like the tipping that there is in the US. I really don't get why people can't be hired to do a good job, get paid a fair wage, and just do it.

Question- What percentage of total income come from tips for a person that works in a restaurant ? And is this 100% declared as income on their tax returns ?

Why? I have never stiffed anyone, but would if my service was horrible enough that I felt no tip was earned. I've waited tables. Giving decent, 15% worthy service, is not hard at all.

On a side note, when did Applebee's start including gratuity? I really do not like that practice at all. I routinely tip 20% or more, but if an 18% gratuity is automatically included then that's all they get.
