Carolina barbecue. (As opposed to East Carolina barbecue ...)

Hard to come by, in these parts.

What's the difference? I live in Virginia, but I cannot keep track of all the different barbecue types for anything. 

I'm no connoiseur, I just ate a lot of barbecue in the South.

EAST Carolina barbecue has a tangier sauce due to the vinegar. (I think there are four main types of Carolina barbecue, but ALL use pulled pork).

The closer you get to Louisiana/Mississippi, the sauces are still tomato-based and sweet but get HOTTER.

Memphis-style is tomato and sweet.

That's about all I can think of.

Right now, that's ALL I can think of.

HOT sauce is the best.. I heart hottness
