Yum. I love Mexican. I would make/eat it all the time if I could. But no, instead I'm trying to be healthy and am going to make some vegetarian West African soup thing from my Best of Cooking Light book, made with sweet potatoes and chickpeas, etc, which I am sure will be filling and nutritious and also tasty, but not nearly as good as melted cheese over shredded meat...

This is very true. Cheese is the best food ever. Except when weirdos put cheddar on apple pie. I don't get that. I like apple slices with cheddar, but I don't like my pie adulterated with anything, not even ice cream.

Not to be confused with the "other" combo of pie and ice cream. I like that...

I haven't had apple pie with cheese.  In some way, I am intrigued by the idea.  I like cheese.  I do not like ice cream with pie.  I can't enjoy warm pie when there is ice cream melting all over.

I know - with the exception of adding whipped cream to pumpkin pie (pies that are already topped with whipped cream, like chocolate cream pie, don't count). I also don't like ice cream on my cake either. Ice cream cake is a different story. But I prefer my cake and ice cream to be separate.

as I seem to recall, regular cottage cheese is not that bad to start with.  so I just get the regular.

My mom used to substitute cottage cheese for ricota cheese in lasagna when we were growing up poor(er).  Not a bad substitute...

My dad used to make it like 2 or 3 times every week in the fall.  I was pretty sick of it for awhile.  It's been long enough that I miss it.  Maybe I'll make some this weekend.  I have to find some good apples.

Really? I always figured the whole milk cottage cheese (that is like 4% milkfat) was the devil, because it's so tasty. So I never get it.

Yup, we'd go apple picking every fall and my dad would make a pie, and apple sauce. I need to go apple picking. Not sure if the apples here are good, though. I get empires and macs from Wegman's only, and those are trucked in from NY. I might try to go apple picking this weekend, if I can find a friend to come with - my roommate went without me yesterday - she thought I had the day off and was going to invite me
