Okay... here's the recipe I found in my "Paleo Comfort Foods" cookbook: 4 large eggs 4 large egg whites 1 cup (250 mL) canned pumpkin 1/2 cup (75g) almond flour 1 teaspoon baking powder 1/4 cup (125 mL) coconut milk 1 teaspoon vanilla 1/2 teaspoon nutmeg 1 teaspoon cinnamon 1/2 cup (50g) pecans, crushed (optional) 1-2 tablespoons butter or coconut oil The only thing to note (from the book) is to prepare them as normal pancakes, but they won't bubble like traditional pancakes as the batter is about thicker. Medium heat for the 1st side takes about 2-3 minutes and another 1-3 minutes on the other side. |
