I'm waiting on traffic to clear-out a bit because it's a T-Stormin outside and they don't teach driving in the rain in Texas...

But then I think I'm gonna do a Salmon concoction of some sort.  Any ideas?

Two chicken breast cooked on the stove top until just barely done. Then I add 4 jumbo egg whites, 1 whole egg and 1 cup of rice already cooked. I continue cooking until its kinda like stir fried. Delicious! This will be for my wife and I, the kids will have pizza.

I've done a baked tilapia - dredged in egg and then coated with a mixture of almond meal, garlic, lemon zest, fresh parsley and salt/pepper. You could probably do it with salmon. It's one of the best meals I've had in a long time. Made it 2x last week!

Working late tonight as our earnings release is in the morning. No clue what I'm gonna have for din-din but don't have much food at the house

I may try this.  I just need Almond Meal, Garlic, Lemon Zest, Fresh Parsley...

I can't wait till we get our house built and I can go home and make real food for me and my wifey.

Since the boudoir is off limits...

Seems the MIL is making grilled chicken tonight. At least that's what's been out to thaw all day. Quinoa maybe? Steamed broccoli could be a possibility.

If that doesn't float your boat... there's chocolate cupcakes for dessert

One of my favorites is a simple Salmon Provencal.

Preheat oven to 400.

On a piece of foil (large enough to wrap this all up in), place a few whole slices of red onion. Place a piece of salmon (about 4-6oz) on top of it, skin side down.  Sprinkle some Herbs de Provence over it. On top of that, place some minced garlic or shallot, a few kalamata or nicoise olives, 1 or 2 plum tomatoes - halved (I like to cut them on a bias for looks),  can also use grape tomatoes cut in half instead.  Sprinkle more herbs de provence over top.  Squeeze the juice of 1/4 lemon over it, wrap up the foil pouch and put it in the oven for about 15 minutes.  Artichoke hearts are also good to add on top of it.

 

Serve with some rosemary red potatoes (just start these in the oven about 20 minutes before the fish goes in) and sauteed or grilled asparagus tossed in olive oil and garlic

Leftovers for me.

I have a little more home made chicken vegetable soup left, and yesterday made a pork loin roast in the slowcooker, made some home made rolls and veggies to go with - so THAT has some finishing to do.  Maybe a pork loin panini with soup?

Monday's (and usually Tuesday's) are too hectic to cook. I usually get about 15 minutes at home after work before I have to roll back out the door and I don't get home until shortly before bed.  Besides that, you can't cook what you don't have on hand.
