Heh.  Kristen, this is actually when you get to load up on protein before your carbo loading starts...

For a MN BT challenge, I'm trying to get down to a race weight of 142 by April 1st.  I was actually good today:

Breakfast - a bowl of shredded wheat, 1/2 bagel and jam and 1/4 can of canned peaches

Lunch - applesauce, couscous with lentils and tomatoes, and an oatmeal cookie.

We'll see how long this lasts. Innocent

Well crap.  My left knee really hurt after the marathon (it was hyper-extending) and it was finally feeling better.  Until I got up from my desk a little while ago and it felt like it popped and now it's killing me.

Looks like I need a visit to the sports doc too.

Did you make the couscous with lentils?  That sounds really yummy.  

It came in a box.  Kinda like Kraft mac & cheese.  Didn't take too long to make either.  I made it in the breakroom.  3 minutes to boil the liquid (1.5 cups water, 2 teas olive oil and spice mix).  Added the couscous (with dried lentils and tomatoes), covered and left standing for 5 min.

Good.

Melissa Update: Still crazy busy, but I am done with the live-in nanny position. I will be moving all my stuff out(hopefully) tomorrow. There is no school and some of my buddies have the day off.

There is a ton to catch up on in school, but my instructor is awesome and very understanding. We got together and prioritized the assignments that I still need to get done.

This Saturday I may be going on a day hike-snowshoeing. One of my potential future roommates teaches mountaineering courses and is taking his novice snowshoeing students on their first trip. Compared to them I might actually look like I know what I am doing. I have everything I will need for the trip and some experience-last spring I went snowshoe backpacking on Mount Rainier. It was the most weight I have ever carried backpacking, the first time I went any distance snowshoeing, and the first time I had been snow camping. I be able to handle an instructor led day trip.

wow-that turned out to be a drive-by memoir...

Once I get caught up in school I will be able to return to my mad posting spree. At my current rate I will not reach my 10,000 post goal by the new year. If I can't manage my first 10,000 posts in 6 months I will consider myself a BT Forum Failure Cry

Oh, I'm jealous... I haven't gone snowshoeing since I was 6 mths pregnant with my 5yo  

Everytime I walk to the other offices I starte at the clouds over the mtns... it's snowing up there....

I tried Beth's recipe.... it was pretty good, though I added some oregano, pepper, garlic
What I liked most was that it was cheap, easy, and I had everything on hand... yep I'll do it again
