BGE is great if you want to be by your smoker all day.  but do yourself a favor and buy a traeger... pellet smoker is auger driven with a digital temp regulation.  i can smoke a brisket starting tonight and have it perfect without a touch tomorrow at noon.... no better way

There is no doubt that is a bad arse smoker, and possibly the easiest way into smoking if you are a beginner......but, for me, half the fun of smoking is tending to the grill all day as I sit by the pool and enjoy some beer.  That's the best way!

I developed a deep love for Moose Tracks ice cream after the delivery of my second child (someone brought us a gallon w/ dinner right after she was born). And guess what? I ate a lot of it when I was pregnant w/ #2 and #3. Between two chocolate chip cookies? Woah. Thanks Vegas, now my keyboard's all slippery.So what did you end up having for desert?

I smoked some jalapeños from our garden last summer and infused them in some silver tequila for a couple of days. Made of some amazing spicy smokey margaritas. Can't wait to try it again this summer.

There's a bar in NYC that makes a drink with bourbon and smoked Coke. They put a shallow pan of Coke syrup in the smoker and cold-smoke it until it takes on the smoke flavor. Seems like an awful lot of work to me, but it was tasty.

I made a grilled chocolate/bananas foster pizza a few weeks ago. I made a pizza dough and added a little cocoa powder (mostly for color). I brushed some sliced (lengthwise) bananas with melted butter and brown sugar mixture then grilled them. I grilled the pizza dough and spread Nutella over the top, then laid on the grilled bananas. A little dusting of powdered sugar for effect. Voila.

Hmmm...How about this: lemon/lime sorbet with a few thin slices of smoked jalapeño, a drizzle of orange liquor and a sprinkle of coarse sea salt, just to complete the margarita-in-a-bowl effect? That might be really interesting. If you wanted to go nuts you could make an orange-infused agave syrup instead of (or in addition to) the orange liquor.

The smoke really needs to be contained and surprisingly minimal. If you really want to smoke? I'd buy a smoker. I got a weber smoky mountain for christmas and have done a ton cooks on it. Including but not limited to, pork shoulder, brisket, ribs, chicken, bacon (yes bacon from scratch...and it's awesome) jerky, short ribs, lunch meat and the list goes on. Check out some smoking forums on "the virtual weber bullet" and "amazing ribs". It's like the BT of bbq.

Made your own bacon, huh?  Sir, I salute you and will take a seat at your table any day.

Alright, I'll just commit to a smoker.  I really love smoked stuff--my stepdad was awesome at it. I grew up eating it quite often.  I don't know why I've never tried it before, but the time has come.

Smoked sable?  One of the best flavor food texture combos ever.

Maybe I'll attempt so sort of smoking in the oven and give you guys a report, if it's an epic fail, it will most likely generate a good story, and that will be worth it in and of itself.

Still enjoying the batch of home-made bacon I made the week after Easter. If it's within your means, I highly recommend picking up pork bellies and making your own. It is so choice. Seriously though: I use Weber wood chips to smoke on the gas grill. Wet them for 30 min, make a foil packet, knife them like you're Jodi Arias and poke a few holes. Put them under the grates on the flavorizer bars and heat the grill. Shot off the other zones and keep the flame on medium-low on the packets. Put your delicious treat over then in-foaming zones and smoke away. Works great for me.

Dude, we raise heritage breed hogs:)  I've got 3 sows due to deliver any minute.  I'll tag a few of those little guys for the great bacon experiment and let you know how it goes.
