Subject: In this thread, I brag about my dinner last night

2 English Muffins, split open and toasted.

On each toasted muffin, a dabble of pizza sauce, and mounds of very thinly sliced pieces of loin steak grilled the night before, the steak having been marinated in a Honey Chipolte seasoning.

Top the mounds of meat with mozzeralla cheese and chipolte-seasoned chedder shredded cheeses.  Sprinkle with Oregano and Garlic Powder.

Baked for 15 minutes.  Let cool and consume in a state of pure joy.

 

OK, you may now be jealous.

Black pepper encrusted ribeyes in a pan sauce of mushrooms and summer ale. Potatoes and onions baked in foil with butter and garlic.

Not bad for a Monday

Monday night's dinner was rushed leftovers of red beans and rice with sausage.  Yum.

But Sunday night's dinner was rather nice, if I do say so myself.  We're getting into the thick and heavy part of vegetable season, so that's what I was trying to use up.

Salad: garden-fresh peas picked about an hour before dinner, blanched, over fresh lettuce, with mushrooms and radish seedpods sauteed in balsamic vinegar.

Main: chicken, grilled and then quickly tossed in a skillet with some soy sauce and butter.

Sides: steamed broccoli; beets sauteed in balsamic vinegar and butter, served over wilted greens.

Wine: I don't remember, but it was pretty good.

Dessert: vanilla ice cream with chocolate chips.

My dinner last night:
Crunchy salad made with cucumber, tomato, avocado, red pepper, onion, cliantro, green onion, all diced, add corn, mixed with lime juice, salt n pepper to taste. Topped with steamed shrimp. Finished off with a small ice cream cone.

I hear ya on the veggies.  Lately I've taken to tossing at least one pepper (red and/or green) on the grill when grilling meat.  2 weeks ago, I grilled up steak for the Mrs. and ended up eating grilled red pepper, green peppers, half a poblano pepper and a huge mound of asparagus.  My wife thought I was off my rocker - didn't grill any steak for myself, just veggies.

Hey we had red beans & rice w/sausage too! Except it wasn't leftovers, it was the real deal! My first stab at cooking with dry beans and it turned out well. I'm sure it was better than what Condorman had!!1

Hey we had red beans & rice w/sausage too! Except it wasn't leftovers, it was the real deal! My first stab at cooking with dry beans and it turned out well. I'm sure it was better than what Condorman had!!1

I make a pot of beans and sausage about twice a month, and then eat it off and on for the next couple of weeks.  Bless the makers of the Crock Pot.

Funny, I made red beans and rice for the first time ever last night! That was for DH though - I had take out pizza at a friend's house after the kids finished swimming.  Nice and relaxing Monday afternoon! 

Tonight is grilled porterhouse for me, left over beans and BBQ chicken for DH and plain grilled chicken for the kids.
