I also have hickory, would you use that or cherry, or both? Cherry is good on anything pork so don't worry. You could go just cherry or if you like the flavor of hickory, toss some in as well. I'll usually do pecan and apple when I'm smoking ribs. As for rub, this is what I went with on the brisket... black pepper, white pepper, sea salt, ground coffee, cayenne, chili powder, garlic powder, onion powder, brown sugar Ok, time to go run so I don't feel as guilty once I start putting some hurt to that brisket. |
