Looking for suggestions for food items to bring to a pot luck.  The list already looks full of deserts and snacks/appetizers, so a main dish would be good, but I will take any/all suggestions.

OPTION #1:

Pulled pork or beef roast.

4lb roast, can of coca-cola, jar of chili sauce, an onion, some worsteshire (sp?) sauce, a little hot sauce, etc.

Add all to crock pot night before and cook on low heat.  Morning of strain out grease and pull meat apart w/ fork in a bowl.  Add meat back into crock pot w/ sauce (minus the grease).  Serve w/ rolls to make little mini sandwiches.

One 4 lb roast should make enough servings for about 12 to 15 ppl.  See if you can't convicne someone else to make a potato salad (goes great together).

OPTION #2
Gumbo...  if you know how to make a good one   Everyone raves over my gumbo and it usually will feed about 16- 20 ppl out here (maybe 8 back home, lol!)

I might make a green chili enchilada ring with crescent rolls...  It's WAY too fattening/high calorie to make at home for just me and the wife, but if I can pawn it off on unsuspecting co-workers but still get a taste...

It's freaking delicious though.

Maybe a crock pot chili, but then I need to bring cheese, onion and oyster crackers - you know the usual accoutrements...

Shrimp Gumbo or Jambalaya???  Probably have to make chicken instead of shrimp or your shrimp would be chewy, unless you were just adding it right before they ate.

Does it have to be a hot dish?

If so, my wife makes a "Lumberjack beans" crock pot dish that is a big hit - it contains bacon and about 3 different types of beans (I think one type is lima beans).  I'm serious here, and it's delicious.

Carl Pilkington from the Ricky Gervias show says that in olden times, they threw everything into a pot.  And when you scooped it out,  you could get a nice piece of meat, or a gristley bone.  So it was pot luck!

I'm not sure if there is anything true to this.  And they make fun of Carl being a moron.  But I like it!

Don't be that guy who brings
1) Paper plates/utensile/napkins and nothng else
2) A few 2 liters of soda and nothing else
3) A bunch of Subway sandwiches and cuts them into smaller pieces

I like to bring chili - prepare it the night before in the crock pot and plug it in on high when you get to work. Usually crockpot in high for 4 hours will do the trick for chili (caveat, I've never done it with meat involved). I just throw a bag of shredded cheese next to it, along with plastic bowls as those are usually forgotten or not on-hand.

Oh no.  Pot Lucks are the means in which I use to show off my mad cooking skills to the masses.

Sliders? Can do everything the night before and just bring and wave for a few minutes...
Stuffed Jalapeños? Raw, whole jalapeños and stuff with deli style salads and such
Egg rolls?
Sushi?
Bruschetta?

I guess, for an office party, I'd think finger foods and easy to eat is better.
