You shuck 'em, keeping the liquer in the shell and place them on the grates. When the liquer starts to bubble, you sprinkle a mixture of herbs, bread crumbs, and parmesan onto them and let the cheese melt. Soon as it melts, pull them off and serve on a bed of rock salt (to keep them upright so things don't spill). Middendorf's does a BBQ version that I've yet to figure out, but I've come close by adding a smoked paprika to the mix.
Google "Dragos grilled oyster recipe" for the recipe I've been using. I can't find diddly on replicating Middendorf's.

Hold the oyster with a folded hand towel (or, if you want to be all official and junk, they make actual chainmail gloves for this). And I've done that, too... buried a shucking knife into the palm of my hand. Not fun. |

And I need to learn right quick like as my beds had some JUST under leagal limit last season. I'm going raking just as soon as I can stand the water temps with a wetsuit underneath waders. |
