An order was placed that I had to fill...

Reverse chocolate chips cookies (chocolate cookies w/ white chocolate chips).  These have always been some of my faves, but never tried them.  If they taste as good as they look (and the batter tasted)...

The real men of TAN are culinary geniuses. I made mushroom lasagna from absolutely nothing in a can, box or jar. Pasta from fresh flour and eggs, raddichio, mushroom beschamel sauce. sauteed mushrooms and garlic and smoked mozzarella + rueglar mozz cheeses. Bottle of Nouveaux Beaujolais and call it dinner. OK, I didn;t ferment and bottle my own wine (this time, but I have before). Peppermint / white chocolate bark candy for dessert.

Tony is also a culinary genius, as is Kido.

I invented an unique version of a shepherd's pie recipe the other day.  It's amazing.  That's the route I plan to go from this point forward.  I know I keep talking about it, but it's one that was surprisingly good.  I only have ONE more tweak I plan to introduce next time around.

Made the (gluten free) crust from scratch, homemade pesto, roma tomatoes, fresh mozzerella, basil.

Pretty tasty! Next time I will "seed" the tomatoes first though - the toppings ended up a bit watery and I think that was the culprit.

I learned about de-seeding tomatoes from making gyros. SO much better with only flesh and not juice.

Pizza sounds good! (both kinds)

I am baking soft pretzels tonight for a snack. I am, however, using frozen bread dough as starting material. So sue me...

Yeah, I learned the seeding trick a while ago. Also, using roma tomatoes is a good option.  They are firmer and far less "juicy" in general.

homemade pesto? Surprised that seems complicated to make, for some reason.

It's super easy, just have to make sure you have everything on-hand. Measurements are very forgiving, I don't even know how much I put in to be honest.

Fresh basil (2 handfuls?)
Pine nuts - toasted (small baking nuts package)
Parmesan cheese (1 handful?)
Garlic (1 clove)
Lemon juice (1/2 lemon squeezed)
Olive Oil (enough to make it smooth - prob 1/2 cup?)

Really just throw it all in a food processor and whirrrrrr you're done!  
Awesome "sauce" for a pizza, good alternative to the red stuff.

I made homemade pesto once and it was good. I dont know if I'd like it on 'za. I am a big fan of marinara.
