Trek OCLV carbon (which in itself comes in like 4 grades ) is massively strong and is subjected to the equivalent of 250 pounds bouncing around on it for the equivlent of 10,000 miles or something crazy like that, during the testing process. I feel very confident about it. I ride a LeMond Zurich which is carbon on the seat tube and top tube, and steel in the head tube and down tube. Super comfy ride.
My "beater" is a 1991 Specalized Epic - one of the early carbon frames with aluminum lugs. I've ridden that at weights from 220 to 182 and back up to 250, and no problemo on the frame.
So I think the whole "carbon's not for Clydes" thing is a myth, personally.
