Subject: Refrigerate?I started buying old-fashioned pb -- just peanuts and salt. I got irritated that everything else has transfats. What the ? Anyhow, I just today noticed that the jar says it should be refrigerated to retard oil separation. Well, I haven't been doing that and it's been just fine. I have a special technique that even fixes the problem. It's called STIRRING! Geez, the Publix people must think we're idiots. Anyway, I've been eating PBJ sandwiches (natural pb, stawberry preserves on Earthgrains honey whole grain bread ) for several weeks now and I think they're miraculous workout food. So much energy from such a humble nut!
On a refrigeration related note -- I just recently noticed that my blueberry syrup was supposed to be refrigerated as well. Well, it's been sitting in my pantry for at least four months, after having been opened and I didn't notice any ill effects from my waffle binge this weekend. Do you ever wonder if food manufacturers are just toying with our heads? Maybe it's just me. I'll eat just about anything past its expiration date or badly handled as long as it smells good.
But back to peanut butter.
