I have Bourgeat stainless clad copper.  It is so heavy that I call it my combination cooking/weight lifting equipment.  The thing it does well is distribute the heat evenly.  Stuff sticks on the hot spots so nothing ever seems to stick to it.  The handles are cast iron so you can brown stuff on the range and finish in the oven.  

I also have my mother's complete set of Martin cast iron.  This used to be the premier iron cookware.  My uncle was one of the Martin brothers.  The Dutch oven has a lid that you can use as a frying pan. It is a really great pot.  The frying pans are all perfectly flat.  There are about 5 sizes.  We even have the tiny 3 1/2 skillet.  We also have all the cornbread molds for stick and round cornbread.  JWKMH won't eat any bread or cornbread so I never make it anymore.  Such a pity.  I used to make cornbread like my mother's using bacon drippings in the mold.  It was soooo good.

My mouth just started watering! My favorite restaurant in Napa Valley has the most beautiful skillet cornbread they do in cast iron.

That's more than a pity...it's a tragedy.

I know a lot of good pans can go from stove to oven, but not that I have can, except the cast iron.  We have a pretty good high end set but they have synthetic type handles.  Sort of a rubber.  Nice, but can't put in the oven.

Plus I have to admit - there is something cool (to me) to go retro/old school with straight up cast iron.

I have gone to williams and sanoma and they sell a porcelain/enameled cast iron that is EXPENSIVE.  Like 325 bucks for a 6.5 qt dutch over (Le Creuset).

Honestly, I prefer the $40 version I can get at bass pro shops and just take the time to season them and put the time into them to get them right.  PLUS I can take it camping!

 

TYPO...  the dutch oven was closer to $300!

I've had to remind her innumerable times to use the non-scratch cooking utensils.  These are supposed to be scratch-proof and indestructible. Made it through a month of her cooking (with knives and forks), so must have some merit.

I think it says butter "isn't necessary". Pshhhaaw! Especially on veggies. Last night was yellow squash with lemon pepper, just browned with butter. Yum.

I actually went back to real butter years ago and usually don't do the margarine.  Since I limit it's use, I might as well use the real thing.  I know some margarines are "better" for you - in other words, a little less bad.  So if I'm going to be bad...  go for the good stuff!

 

I stopped using margarines in the mid-90's when I learned that most are literally like one molecule/bond away from being a plastic.  Nothing but real butter and oils for me.  Low temps, olive oil. High temps, peanut oil.  Have some canola left over from I don't know what

That's why I'm so happy with my World Market $40 one.  It's a heavier cast iron, perfect enamel coating.. for a whole lot less.   To be "fancy" however, I bought a replacement LeCreuset knob on Amazon to replace the stock knob

No, I haven't tried coconut oil, yet.  Any idea if it has some of the coconut flavor to it?  If so, I bet that'd be perfect to use when making curries.

Right...  Canola/corn/vegetable oil is still used in some recipes I make - mostly pumpkin bread and a couple other things I can't remember.

My friend says pretty coconutty, but good with veggies and the meats she's tried. Not something to bake with so much. 

And, you're right, I bet it would be great with curries!

hahaha! I saw an awesome pic of an X-Box/controller wedding cake the other day. Bride/groom had mini controllers and headsets. Thought of the TANgents.

Rocking Friday eve here... about to do a 2 hour trainer ride, then a 10 mile run.  Getting started about an hour later than I would have preferred. Oh well. Good thing it warmed up since this morning!

Ooh have fun! I always enjoyed going out to cut firewood and playing with chainsaws. A hydraulic splitter was always nice but there is something very satisfying about splitting wood with a sledge and a wedge too.

Ooh have fun! I always enjoyed going out to cut firewood and playing with chainsaws. A hydraulic splitter was always nice but there is something very satisfying about splitting wood with a sledge and a wedge too.

A maul is faster than either splitter or wedge/sledge. It is very satisfying to take a big swing at an 18" log, hit it dead center, and see it crack into two pieces.
