I make a pretty mean
Pad Thai - and I don't mind sharing!!

1/2 lb
(8oz
) rice vermicelli noodles
1 lb shrimp, pork or chicken
(or mix
)
Sauce:
1/4 cup fish sauce
1/4 sugar
1/4 white vinegar
1 t paprika
2 T sri racha or to taste
Other:
1 small red chile, sliced
2 shallots, sliced
4 cloves garlic, minced
2 eggs, beaten
2 C bean sprouts
4 green onions, minced - large pieces ok
1/2 C peanut oil
(less if not in wok
)
Garnish:
fresh lime juice
handful chopped peanuts
cilantro
1. Soak rice noodles in warm water x 30 min, drain well
2. Mix fish sauce, etc... until well combined
3. Heat oil, add chile, shallots, garlic
(DO NOT BURN!
)
4. Fry meat of choice in oil, remove when cooked & set aside
5. Add noodles to pan, stirring and tossing quickly with 2 spatulas to separate the strands.
6. Add sauce, mix well, continue cook
(if the noodles are still too firm, drizzle with 1 to 2 tablespoons of water to help them cook.
)
7. Push food to one side, lower heat, scramble egg in other side, fold into noodles
8. Add cooked meat, ½ sprouts, onion, toss and heat thoroughly
9. Add cilantro, remainder of sprouts handful chopped peanuts, squeeze of lime, serve.
Serve w/ cold beer or Riesling
