I love fish, and fish loves me. I like white fish, orange fish, red fish, raw fish, cooked fish, fried fish, baked fish, poached fish, braised fish, steamed fish, puree fish, cold fish, hot fish.
Stick a piece of fliet

) on a piece of parchment or foil, add a dill, sliced scallion or onion, a little salt

), a little pepper, a little garlic. Wrap the thing in a little pocket and baked.
Oh you don't want to bake fish. How about pan fried?
Olive oil, salt and pepper, fried. Diced tomato, corn, green pepper. Sautee them in oil a little and use them as topping on the fish.
If it is fresh perch that you know it's high quality. You can try cerviche. Add loads of lime juice, jalapeno, tomato, onion etc. Dice fish and soak in the marinate. The acid will "cooked" the fish. Great with oven-baked pite chip or tortilla.
