Subject: anyone like fish?
I've never ventured into the relm of cooking fish, but last time buying groceries, I thought what the hell and picked up a Perch fillet.

Now I have no idea how to cook it besides stick it in the oven.

Anyone know of any good recipies for baked Perch?

I love fish, and fish loves me. I like white fish, orange fish, red fish, raw fish, cooked fish, fried fish, baked fish, poached fish, braised fish, steamed fish, puree fish, cold fish, hot fish.

Stick a piece of fliet (defrosted of course) on a piece of parchment or foil, add a dill, sliced scallion or onion, a little salt (a little, cus' it tend to dry up fish), a little pepper, a little garlic. Wrap the thing in a little pocket and baked.

Oh you don't want to bake fish. How about pan fried?

Olive oil, salt and pepper, fried. Diced tomato, corn, green pepper. Sautee them in oil a little and use them as topping on the fish.

If it is fresh perch that you know it's high quality. You can try cerviche. Add loads of lime juice, jalapeno, tomato, onion etc. Dice fish and soak in the marinate. The acid will "cooked" the fish. Great with oven-baked pite chip or tortilla.

I think that's all I have.

A nice fillet is good grilled

thaw fish
brush with olive oil, add a little salt and pepper to both sides slap on a hot grill for a couple of minutes per side

Also my favorite baking method

pancoat a piece of foil on a cookie sheet (aids in fast clenup)
slice a lemon or lime across the grain into very thin slices (best if you can see through them)
dice a few cloves of fresh garlic
put the garlic, some dill, salt and pepper on top of the fillets and cover everything with the fruit slices
bake

I like to bake some pears at the same time (actually you probably want to start the pears first) and seerve the pears and fish on top of a salad of mixed greens, grape tomatoes, dices cukes and pine nuts

A little salt and pepper on both sides of the fillet. Sautee it in equal parts butter and olive oil (maybe a tbsp of each) with some finely chopped garlic, a couple minutes on each side over pretty high heat. Finish with a squeeze of lemon juice.

Look in the cookbook. They'll usually have some suggestions for cooking times, and even a few recipes.

Baked, we usually sprinkle with a little salt and pepper, maybe a splash of lemon juice and into the oven. Filets are usually pretty thin, and they cook fast, so it may only take 10-15 minutes baking to be done.

13 perch recipes here. I use this site a lot when I have one particular ingredient I want to use. why "Tequila Martinis" are included in this list, I have no idea....

Dang forum.... Ok, bake it with white wine and the juice of an orange and a lemon, some salt, pepper, garlic or whatever. Set some orange slices on top and yum!

I had perch for dinner last night.  It can be baked in the oven, fried in a pan or barbecued.  Last night I was feeling lazy so I simply warmed some olive oil in a pan, peppered the filets and dropped them in   I fried it the fillets for 4 minutes on each side, on a medium-high setting.  I squeezed som fresh lemon juice on them and served them with asparagus*, salad and white wine ... it was dee-li-cious!

* the asparagus had been sauteed in red wine and garlic.

Ok.  I had mahi-mahi tacos in Cancun, darn good too!  Of course I used chipotle sauce. In fact, I put Tabasco brand chipotle sauce on just about anything, the same goes for my wife and son!  Ummm, hot sauce, couldn't live without it.

so is perch a pretty flavorfull fish by its self or is it something I'm going to need I'm going to need to carefully spice to get good flavor from?
