Thank you, This really is a hard time, I LOVE me some cheese.. I even married a cheese-head. (Packer fan)..

I've only had a few - the rice shreds mozzerella stuff (on homemade pizza) and pepperjack soy slices (on veggie burger and in omelets). Both good!
I hear Daiya brand is really good as well.

One this is for sure:  less cheese means less cutting of cheese, in every way. That is a good thing.

I was surprised after traveling in Asia for two weeks and have little (no?) dairy, how awesome my digestive system was working.  Of course I went right back to the dairy when I returned...

Eat my corn dogs to fill the empty gap left with the absence of cheese. Corn dogs are all natural and fat free.

I was always light on the cheese anyway, but I could never completely cut it out.

I like a good Brie, or smoked gouda, blue cheese on salads, etc.  In moderate amounts.

 

But I stay away from the processed amounts or the large amounts like on pizza, or mac -n-cheese, etc.

As of about March this year, I did also :-( :-(

At first it was ok, but lately I've REALLY been missing pizza...

I have found that the fake cheese gives me gas...heh, cut the cheese... I believe its the carageenan (sp?) that is used a thickener in dairy replacement products.

So me -- goat cheese! I enjoy it! I've made quite a few recipes with goat cheese and it usually works. Its a little pricey and I've found it goes bad fairly quick...but it gives things some taste. I even ordered a Papa John's pizza with no cheese and then put my own goat cheese on it :-)
