Subject: Sausage Rice and Cheese Casserole

Anybody have any favorite recipes for a sausage, rice, and cheese casserole? 

 

I need to bring a dish to a Thanksgiving party on Sunday night.

If you're going for broke, here's a really tasty, fat-laden recipie. I can feel my arteries hardening already. I make this for holidays, and not for daily consumption

1 lbs cheese (preferably sharp cheedar) grated
1 cup or so half-and half
1lbs sausage browned and drained
about 6-8 cups cooked rice (I normally use 1 lbs elbow macaroni, but you can substitute equat volume cooked rice)
3 oz. butter
3 oz. flour

make a roux of the butter and flour (blonde)
add half & half and heat over medium low heat
add cheese slowly while whisking constantly
when smooth remove from heat and pour over rice and sausage in oven proof dish
bake at 350 until brown on top

Edit to say--- all measurements are approximate I rarely actually measure anything and I'm going from memory here

Not exactly what you are looking for but a favorite from childhood.

1 package egg noodles
1 pound bacon (browned and chopped)
1 pound ground beef (browned and drained)
1 can cream of mushroom soup
1 can cream of tomato soup

Cook noodles just shy of directions on package. Combine all ingredients into a glassware baking dish. Top with 1 pound of jack cheese. Bake at 350 for 35 minutes (or so).

Eat. Clog. Sleep.

1 onion
1 head fresh brocoli
1 can cream of chicken soup
1 can cheese soup
2 bags of 'boil in bag' rice (brown or white)
3+ cups shredded cheddar/jack cheese

Cut chicken into bite sized pieces and stir fry until cooked (add salt/pepper). While chicken is stir frying, chop onion and brocolli. Start cooking (boiling) the rice as well.

When the chicken and rice are cooked, combine all of the ingredients except half of the shredded cheese in a bowl and mix. Pour mixture into a 9x13 baking dish. Top with reserved shredded cheese. Bake in 375 degree oven for about 30 minutes.

Dave, it's pie crust season. Have you got it under control???

I think I'm going with pear clafouti and pumpkin pie this year. That's it for Thanksgiving.

Dave, it's pie crust season. Have you got it under control???

I think I'm going with pear clafouti and pumpkin pie this year. That's it for Thanksgiving.

Oh, yeah, I have nailed the pie crust thing......use butter.....keep it cold, and don't play with it too much.
I actually make it a little too dry at first and them add a little more water to make it workable after putting it in the fridge for a couple of hours.
Even my wife, who professes to not be fond of pie crust, likes it.

I am making stuffing with country ham, cranberries, and pecans and a margarita cheesecake (maybe a chocolate grenache(sp) on top) I'll be cooking all weekend.

Nope, just regular Campbells. I know, I know. I need to quit sneaking stuff in my diet. My problem is that I have no symptoms anymore...

I have experaminted with a white sauce made with corn starch -- not as tasty, but it works.

These are all great ideas. I like the chicken, rice, and cheese. I think I found a good'un (sausage) on cook.com

The cheese cake has limeade concentrate, lime zest and tequila mixed into the batter. I am a big fan of lime and chocolate.

I spend way too much time on www.cooks.com ... make sure you get the "s" in there ... if you search for a recipe there, you'll find that people will post their variations. I actually found several recipes that were very close to "lost" family recipes where people knew the ingredients but not necessarily how they went together.
